With this oil, we wanted to pay homage to the origins of our family, recalling the ancient castle that overlooked the Osa estate. When we decided to certify our olive groves in 2020, RIPALTA was born, a blend of Moraiolo, Frantoio, and Leccino in accordance with the regulations of the "Colli Orvietani" PDO (Protected Designation of Origin). It is an intense, medium-robust oil with pronounced bitterness and spiciness, a bright green color, and on the nose, it evokes hints of freshly cut grass and olive. The mandatory analyses it undergoes highlight a very high content of polyphenols and an acidity that has never exceeded 0.2 to date. It is particularly suitable for important meat dishes and flavorful dishes in general.
